Get the Buzz without the Belly: Vegan Paleo Coffee Blondies Recipe

This vegan paleo coffee blondies recipe will soon become a kitchen staple. They are soft, chewy, and completely guilt-free. Once you master this recipe, consider adding in other fun ingredients, such as chocolate chips, dried fruit, or nuts. Other ways to play with this blondies recipe is to replace almond butter with another kind of creamy nut butter or to replace the applesauce with one mashed banana.

Completely devoid of eggs and butter as well as white sugar and white flour, this blondies recipe homes in on animal-friendly alternatives, such as almond butter, coconut sugar, coconut oil, and almond flour. The result is a dessert dish that you can even have for breakfast, especially with it having the energy-boosting effects of coffee in tow.

The most important thing to remember is that the almond flour should be as finely ground as possible. That way, it best mimics regular flour and allows the blondies to remain as dense and moist as possible. If you want to make them kid-friendly, simply nix the coffee powder. I imagine you don’t want your kids energy levels any higher than they already are.

Vegan Paleo Coffee Blondies Recipe

Makes about 10 servings

Ingredients

  • ½ cup creamy almond butter
  • 1/3 cup coconut sugar
  • 2 tablespoons instant coffee powder
  • ½ cup unsweetened applesauce
  • ¼ cup melted coconut oil
  • 1 ½ cups almond flour
  • ½ teaspoon baking soda

Directions

Preheat the oven to 350 degrees Fahrenheit. Use about 1 tablespoon of melted coconut oil to grease an 8’’x8’’ glass baking dish.

In a large bowl, combine the almond butter, coconut sugar, coffee, applesauce, and coconut oil. Stir in the almond flour and baking soda. Use a spatula to fold all the ingredients together so they are evenly combined.

Spread the mixture into the glass baking dish and use a spatula to smooth out the top. Pop into the oven and bake for about 20 minutes. Once finished, let cool for at least 30 minutes. Slice and enjoy!
