Homemade Strawberry Marshmallows Recipe
This homemade marshmallows recipe is less intimidating, and even more delicious, than you’d think. Try it out and stun a crowd (or simply yourself)!
Marshmallows make for a light, sweet treat that are fun to have around when the occasion calls for s’mores or a quick sugar fix. But while marshmallows aren’t necessarily healthy, they most certainly can be homemade. Whipping up your own marshmallows takes the mystery out of the mix, so you know exactly what’s going into each and every pop.
Homemade Marshmallows Recipe
- 1 1/4 cups cold water
- 4 envelopes unflavored gelatin (or an equivalent gelatin substitution for vegans/vegetarians)
- ½ cup strawberry puree
- 3 cups white sugar
- 1 ¼ cups light corn syrup
- 1/3 cup powdered sugar
- 1/3 cup cornstarch
Line a 9×13-inch pan with aluminum foil. Coat liberally with nonstick cooking spray. In a large bowl, add ½ cup cold water to strawberry puree. Add the gelatin and stir just enough to distribute it. Let sit for 5 minutes.
In a saucepan over medium-high heat, add the remaining water, sugar, and corn syrup. Stir until the sugar is dissolved and continue to cook while stirring until a thermometer reads that it has reached 240 degrees Fahrenheit. While the syrup is cooking, place the strawberry puree in a mixer and begin to mix it on low. Once the syrup is heated, remove the pot from the head and pour the mixture into the mixer bowl with the strawberry puree. Continue to mix on low, but slowly increase the speed until the mixer is set on high. Whip for 10 minutes or until stiff peaks form and the mixture is glossy looking. Pour the mixture into the pan and use a spatula to smooth out the top. Let sit at room temperature overnight.
The next day, sift together the powdered sugar and cornstarch. Sprinkle the top side of the hardened marshmallow mixture with the sugar and cornstarch blend and then flip the pan over to release the marshmallows and sprinkle the other side with the sugar and cornstarch blend. Cut the marshmallows into squares and roll into the sugar and cornstarch blend again to coat each and every side. Serve and enjoy!
